Domaine Moreau-Naudet 's Chablis 1er Cru Vaillons comes from an emblematic Chablis limestone hillside on the left bank of the river Serein. The 50-year-old Chardonnay vines on the Sécher site are planted on limestone pebbles rich in marine fossils and oyster shells typical of northern Burgundy. Domaine Moreau Naudet cultivates the soil without the use of weedkillers or chemical fertilizers, and harvests the grapes strictly by hand. Fermentation is carried out with indigenous yeasts, followed by 24 months' ageing in vats, barrels and demi-muids. This particularly prolonged maturation for a Chablis Premier Cru is the signature of the wine estate.
Philippe Mischler, sommelier at Mundovin : This Chablis 1er Cru Vaillons from Domaine Moreau Naudet is an emblematic wine, whose harmony between fullness and mineral tension has made it an essential reference over the years. The imprint of the soil is particularly marked in this cuvée. A great success that will delight lovers of Chablis Premier Cru for at least a decade.
The nose evokes the freshness of white flowers and flint, complemented by fruity aromas of green apple and juicy pear. Iodized and delicately lemony notes complete a palette full of refinement and restraint.
The palate is refined by ageing and develops a saline texture that lengthens the wine's body. Flavors of white fruit and fresh citrus melt into a chiseled texture, prolonged by a mineral sensation with a deliciously chalky texture. The finish leaves a fresh, sapid imprint characteristic of the Vaillons climate.
