Domaine Moreau-Naudet 's Chablis comes from some twenty small parcels spread over the hills of Chablis, in northern Burgundy. The Chardonnay vines sink their roots mid-slope into clay-limestone soils resting on Kimmeridgian marl, typical of the appellation. This shallow, stony terroir gives Chardonnay its characteristic tension and minerality. Domaine Moreau Naudet, founded by Stéphane Moreau and now run by Virginie Moreau Naudet, works without weedkillers or chemical fertilizers, and harvests exclusively by hand at optimum maturity. Fermentation is carried out using the indigenous yeasts present on the grapes. Ageing, which is particularly long for Chablis, lasts an average of 18 months on fine lees, mainly in vats, to preserve the purity of the fruit and the saline expression of the wines.

Philippe Mischler, sommelier at Mundovin : Domaine Moreau-Naudet 's Chablis aptly embodies the tension inherent in the limestone terroirs of the Chablis region. The balance between ripe fruit and natural tension testifies to the precision of Virginie Moreau Naudet's work. A pure, efficient Chablis!

The nose evokes the delicacy of white flowers, the sweetness of preserved lemon and the iodized freshness of oyster shells. The overall impression is one of limpidity, where the chalky tension is enhanced by the ripeness of the fruit.

On the palate, Domaine Moreau Naudet 's Chablis soars with crystalline energy. The material unfolds with a subtle, appetizing balance between white fruit and iodized salinity. The chiselled texture gives way to a tracing finish, where the chalky minerality of the soil is perceived with persistent limpidity.
