The Bourgogne Aligoté Clos des Bruyères is a unique offering from Domaine de la Sarazinière: as the wine estate’s soleAligoté wine, it breaks away from the conventions of the Mâconnais region to claim the Bourgogne regional appellation. In the late 1990s, Philippe Trébignaud took a gamble by replanting this grape variety in Bussières, where it had largely disappeared despite its deep historical roots. Spanning just 0.70 hectares, the soil of the Clos des Bruyères is also unique due to its acidity and high limestone content, which set it apart from the alkaline clay-limestone soils of the wine estate’s other plots. These distinctive conditions providethe Aligoté with a particularly favorable environment for expressing its exuberant aromas and lively character. Certified organic, the wine estate cultivates its vines without any inputs, relying on regular soil cultivation and exclusively conducting the hand harvest at optimal ripeness. In the cellar, the same non-interventionist philosophy applies as with the rest of the range: indigenous yeasts, with no fining or yeast addition. The Aligoté is then aged in stainless steel tanks on its lees for 15 to 18 months to lend roundness and body to this naturally lively grape variety, without dampening its tension.

Philippe Mischler, sommelier at Mundovin:Aligoté has long been Burgundy’s unloved grape variety, relegated to aperitifs or blends. Philippe and Guillaume Trébignaud demonstrate that it deserves better—provided it is planted in the right soil and given time to develop. Here, the Clos des Bruyères offers both: an acidic, limestone-rich terroir that sharpens its minerality, and patient ageing on the lees that rounds out any sharpness the grape variety may have. The result is a white wine with character—precise yet rich—and an ageing potential that few people suspect it possesses.

On the nose, the Bourgogne Aligoté Clos des Bruyères opens with fresh, aromatic notes of green apple, citrus zest, and ripe pear, complemented by hints of white flowers and acacia. Ageing on lees adds a subtle, toasty undertone—discreet yet persistent—that adds complexity without compromising its freshness. Upon aeration, a lively mineral note characteristic of limestone soils serves as a reminder of the cuvée’s origin.

On the palate, the grape variety’s natural acidity delivers a clean and lively attack. The body, enriched by the lees, offers an unexpected roundness that balances the tension and heightens the flavors of white fruit and flowers. The finish is briny and lingering, with a return to citrus notes and a slight bitterness at the very end that lends it a lively finish.
