Wine Description

Polissons from Clos Constantin lives up to its name: this cuvée, born from the co-fermentation of Cinsault, Grenache, and Syrah, perfectly embodies the adventurous spirit of Pierre Halley and Samuel Durand. Planting on the Font-Belette terroir, where clay, limestone, and sand intermingle in the heart of the garrigue, the vines are cultivated organically—currently in the process of converting to biodynamic farming—and harvested exclusively by hand. Pierre, who trained in viticulture in Montpellier before honing his skills in Sonoma Valley, and Samuel, a sommelier originally from the Loire region who was raised in a family of Sancerre winemakers, have created a wine designed to highlight fruit and freshness.

Philippe Mischler, sommelier at Mundovin: “Polissons du Clos Constantin is the cuvée we gladly recommend to those who want to experience the garrigue in their glass without sacrificing lightness. It’s a red that drinks almost like biting into a piece of fruit—immediately.”

On the nose, the wine opens with a crisp, airy burst of wild red and black berries, touched by the resinous, dry notes of the surrounding garrigue. A hint of gray pepper rounds out this profile and gives it that slight spicy edge that is the hallmark of Larzac wines.

On the palate, its character is confirmed by a juicy texture, supple tannins, and a briny savory note that prolongs the fruit without ever weighing it down.
