Lac aux Cochons de Combel la Serre is without doubt one of the wine estate's most unusual cuvées. This exclusive Malbec comes from a locality embedded in the heart of the limestone Causse, between the hills of Cahors, in the South-West of France. A parcel of just over two hectares, facing south-west, on limestone soils mixed with red clay, perched at an altitude of 350 metres: this wild and windy terroir, nicknamed "Lac aux Cochons" because of a pocket of water where wild boars come to frolic, gives birth to a dense, free-flowing wine of disarming naturalness. Sophie and Julien Ilbert, at the head of the family wine estate, uphold a refined, luminous vision of Cahors, far removed from the stereotypes of excessive power. Here, no heavy extraction, no predominant wood: the expression of the fruit takes precedence, supported by clean, rigorous organic viticulture . Lac aux Cochons is a parcel-based cuvée matured without any make-up, often in concrete vats or old tuns, depending on the vintage.
Philippe Mischler, sommelier at Mundovin: With Lac aux Cochons, Domaine Combel la Serre demonstrates once again that modern Cahors can be profound, digestible and intensely alive. Its balanced profile, taut structure and saline finish prolong the wine without tiring it out, expressing a South-Western Malbec with a racy profile, playing with convention to reveal a true signature, full of personality.
The nose exhales pure aromas of red and black fruits: fresh blackberry, Burlat cherry, enhanced by a touch of licorice and violet. In the background, earthy notes of cocoa, black pepper and tobacco suggest a promising evolution. The whole evokes an intensely expressive Malbec harvested at perfect maturity.
The palate is juicy and enveloping, supported by structuring acidity. The mid-palate reveals crisp fruit, with no excess of ripeness. The tannins are supple, leading to a fresh, slightly smoky finish whose subtle minerality invites the next sip.
