Wine Description
In the landscape of high-end non-alcoholic drinks, LYSEGRØN from Copenhagen Sparkling Tea Company stands out as a modern, elegant and innovative cuvée, like a great terroir wine, but without a single gram of alcohol. Hailing from Copenhagen, the Copenhagen Sparkling Tea Company was founded in 2017 by award-winning sommelier Jacob Kocemba and his partner Bo Sten Hansen, with the aim of reinventing food and beverage pairings. The LYSEGRØN cuvée, the latest addition to their range, is based on a blend of 12 organic teas, mainly green, including Sencha Earl Green, but also white teas and aromatic herbs. Each tea is hand-brewed at the appropriate temperature for a precise length of time, before being blended with grape and lemon juice, then finally the addition of CO₂ to create this organic, vegan, alcohol-free sparkling tea: a fine, lively, contemporary drink, emblematic of high-flying gastronomic savoir-faire.
Philippe Mischler, sommelier at Mundovin : LYSEGRØN effervescent tea crystallizes a refreshing elegance that naturally finds its place on Michelin-starred menus as a refined alternative to the most elegant champagnes. Its light yet assertive structure, supported by a subtle minerality, makes it a veritable manifesto for the revival of gastronomic pairings.
On the nose, the cuvée opens with a luminous bouquet bursting with fresh citrus fruit, accompanied by crisp green apple and a minerality reminiscent of wet stone. The herbaceous elegance of Sencha adds a refined vegetal dimension, already suggesting the richness to come on the palate.
On the palate, the attack is lively and invigorating, supported by a fresh, light effervescence that invigorates the palate. The overall texture is airy and refined, worthy of a great Champagne. The herbaceous scents of Sencha emerge, mingled with lively notes of yuzu lemon, lime and grapefruit. A seductive saline framework heralds a delicately fruity, lingering finish, where the subtle return of green apple intertwines with a deeper mineral touch.
