Domaine de la Tournelle's Vin de Paille "À l'Aube" is a cuvée created with meticulous attention to detail. The process of creating this rare wine begins with hand-picking the grapes, carefully selected for their ripeness and quality. The grapes are then laid out on straw racks for several weeks, where they concentrate their sugars while preserving their freshness. Gentle pneumatic pressing ensures delicate extraction of aromas and flavors. Fermentation is carried out with indigenous yeasts, without the addition of sulfur or chemical inputs, to preserve the authentic expression of terroir.

Philippe Mischler, sommelier at Mundovin : Vin de Paille A l'Aube from Domaine de la Tournelle is aged in wood without the use of new barrels, so as not to mask the purity of the fruit. Bottling is carried out without filtration, a method that respects the wine's integrity and gives it a velvety, natural texture.

From the very first nose, vin de paille reveals deep aromas of candied fruit, with dominant notes of dried apricot, fig and quince. More subtle nuances of acacia honey, salted butter caramel and dried fruits such as hazelnut and almond enrich the bouquet.

On the palate, this sweet wine reveals a smooth, velvety texture, characteristic of well-balanced straw wines. Sweetness is present without being excessive, perfectly balanced by fresh, vibrant acidity that adds tension and vivacity. Candied fruit flavors intensify, accompanied by notes of orange marmalade and gingerbread. The structure is full-bodied, offering remarkable persistence that leaves a sensation of elegant gourmandise on the finish.
