Domaine Hauvette 's Cinsault is a special cuvée in the world of Dominique Hauvette. Just after the frost of 2021, this emblematic winemaker from Les Baux de Provence, based at the foot of the Alpilles, decided to select a few Cinsault vines that had survived the cold to produce a special red cuvée, where the terroir undoubtedly finds its most sincere expression. Always using gentle, low-intervention winemaking methods, based on spontaneous fermentation with indigenous yeasts and ageing in ovoid concrete vats, Dominique Hauvette succeeds in bringing out the best in his terroir on the steep, rocky clay-limestone slopes of theAlpilles PGI, to deliver a full-bodied red, where the legibility of the fruit is supported by a deep, digestible structure.

Philippe Mischler, sommelier at Mundovin : Domaine Hauvette 's Cinsault sublimates this Provençal grape variety in a consensual yet uncompromising cuvée. The identity of the Alpilles region permeates this wine, where the expression of terroir can be seen as much in the full, finely controlled ripeness as in the undeniable freshness that runs through it.

The nose reveals a dashing bouquet of fresh, ripe fruit, where juicy cherry, warm blueberry and crisp raspberry are enhanced by wild, Mediterranean vegetal touches of lavender and thyme flower. A hint of pepper and black olive spice up this already promising glass.

On the palate, the wine unfurls a luscious substance, where the pulpy side of the Cinsault expresses superb maturity without falling into southern excess. Luscious aromas of red and black fruits envelop the palate, while a deep, finely tannic structure takes shape. Planty and herbaceous notes appear, between green almond and garrigue, enhanced by a few sweet spices. The finish stretches the wine's juicy substance to a digestible, airy sensation, where the aromas linger for a long time. The finesse that emerges calls for further tasting.
