Wine Description
Fine de Carignan from Distillerie du Petit Grain is an exceptional wine brandy, made in Saint-Jean-de-Minervois by Patricia and Laurent Gaspard. It is made from Carignan pomace organically grown in Saint Chinian, hand-stemmed and unsulphured. Distillation in an open-fire copper still designed by Jean-Louis Stupfler guarantees precise, controlled heating to preserve the aromatic expression of the grape variety. The toasting heads and tails are removed to harvest only the unfiltered toasting cores, concentrated in pure aromas. The final product, 47% proof, is a floral, fruity wine eau-de-vie, enriched by a two-year period in three barrels to balance its structure and add complexity.
From the very first nose, this eau-de-vie de vin surprises with its precision and aromatic breadth. It reveals great finesse, dominated by candied red fruit, dried fig and plum.
The palate is full-bodied, structured by a supple, delicate attack, marked by warm, complex flavors of orange peel, prune, raisin and plum in syrup that fill the palate. A pleasantly spicy persistence, between Sichuan pepper and cardamom, rounds out the whole. The alcohol is perfectly integrated, giving way to an almost caressing sensation of roundness.
