The absolute pinnacle of Jura viticulture, the Château Chalon appellation produces only yellow wine, exclusively from Savagnin grapes, on steep slopes whose marly soils guarantee tension, minerality and extraordinary longevity. In this cuvée from Domaine Ganevat's Château Chalon , 84 months' ageing in oak barrels under a veil of yeast patiently shapes a rare aromatic complexity.

Philippe Mischler, sommelier at Mundovin: When faced with Jean François Ganevat's Château Chalon , you don't taste, you meditate. The expression of the marl terroir and the winemaker's distinctive style give this cuvée a particularly sensual style, with impressive aromatic intensity and absolute sincerity.

The nose is overwhelmingly complex, with an empyreumatic structure marked by roasted nuts and curry spices, the sweetness of baked apples and candied citrus fruits, and a subtle smoky structure reminiscent of gunflint.

The palate is immediately seductive, with its impressive concentration and innumerable aromatic layers. Roasted dried fruit flavors mingle with roasted yellow fruit, citrus marmalade and candied ginger. The finish is adorned with a fine peaty imprint, adding a complexity to the spicy flavors that coats the palate for a long time with its persistence.
