The Chablis 1st raw Butteaux of the field Jean Collet and sons occupies one of the slopes of the valleys that reach the valley on the left bank of the Serein with a south-east exposure. This plot is composed of blue clay that makes its soil very compact. The vines have more than half a century and produce a more winey and rich look. It is also very close to the Chablis 1st Cru The Forests which is one of the most solar terroirs owned by the estate Jean Collet et fils.
Philippe Mischler, sommelier at Mundovin : The Chablis 1st cru Butteaux du domaine Jean Collet et fils shows a beautiful creaminess and a well ripe material. Its 228-litre barrel farming gives it wealth because its natural acidity is very high and counterbalances well the "gras" aspect of wine. The terroir of Butteaux is a micro-climate that I particularly like for its balance.
On the nose, the wine reveals beautiful notes of badian, pastry touches, notes of orange blossom, salted butter as well as notes of honeysuckle and yellow lemon zest.
The mouth is ample, rich beyond standard. This Chablis expressed with great intensity and balance. The purity of the expression of herbaceous notes makes me travel to the heart of the terroir. A wine already superb today and which will gain further depth within 5 to 10 years.
