The Chablis 1er cru Butteaux of domaine Jean Collet et fils occupies one of the slopes of the valleys that join the valley on the left bank of the Serein, facing south-east. This parcel is composed of blue clay, making the soil very compact. The vines are over half a century old and have a rich, vinous aspect. It is also very close to the Chablis 1er cru Les Forêts , one of the sunniest terroirs owned by the Jean Collet et fils wine estate.

Philippe Mischler, sommelier at Mundovin : The Chablis 1er cru Butteaux from the Jean Collet et fils wine estate is smooth and ripe. Its ageing in 228-liter barrels gives it richness, as its natural acidity is very high, counterbalancing the wine's "fat" aspect. The Butteaux terroir is a micro-climate that I particularly like for its balance.

On the nose, the wine reveals notes of star anise, pastry, orange blossom, salted butter, honeysuckle and yellow lemon zest.

The palate is full-bodied and exceptionally rich. This Chablis expresses itself with great intensity and balance. The purity of expression of the herbaceous notes takes me to the heart of the terroir. Already a superb wine today, it will gain even more depth over the next 5 to 10 years.
