Kévin Bouillet 'sLa Marcette reveals all the delicacy of Ploussard (or Poulsard) grown in Pupillin, the historic birthplace of this Jura grape variety. On the La Marcette parcel, the old vines planted by Kévin's great-grandfather are deeply rooted in the red marl soils typical of the Arbois Pupillin appellation, giving the wine finesse and minerality. True to his natural wine philosophy, Kevin Bouillet favors hand harvesting, spontaneous fermentation, long maceration and ageing without artificial means or added sulfur, in order to let the purity of the terroir and the natural elegance of the grape variety express themselves.

The nose immediately captures attention with its expressiveness, between bright redcurrant, delicate rose and fresh humus. Aeration further enhances the finesse and elegance of this caressing bouquet.

On the palate, the finely enveloping texture of the tannins is adorned with an astonishing lightness, carried by a vibrant freshness that prolongs the impression of a caress on the palate. Flavors of red berries meet delicate tension and the minerality typical of Jura soils. The lingering finish unfurls a silky substance in an elegant display of balance.
