Kévin Bouillet 's Pépin Blanc is an elegant incarnation of the JuraappellationArbois Pupillin. The old Chardonnay vines, aged between 45 and 80 years, rest on grey Lias marl at the bottom of the slope, while the upper parts of the hillside draw on red Trias marl mixed with clay-limestone, ensuring a singular minerality to the wine. Kevin Bouillet works in a natural, non-invasive way, with hand-harvesting followed by direct whole-bunch pressing. After spontaneous fermentation without the addition of industrial yeasts, the wine is aged exclusively in stainless steel vats to preserve the purity and vivacity of this Pépin Blanc.

It accurately reflects the energy of the Jura terroir and the style of Kevin Bouillet. This cuvée is a pleasure to drink today, but also promises a harmonious, nuanced evolution, gradually revealing its complexity.
The nose is expressive and precise, revealing aromas of crisp white fruits, white flowers and a subtle buttery touch.
The palate is marked from the outset by a mineral tension characteristic of the Arbois Pupillin terroir. The texture reveals a slight unctuousness and a surprising roundness on the finish, balanced by a beautiful vivacity and lovely bitters that coat the palate on the finish.
