Les Nouveaux États d'Âme du Mas Jullien isOlivier Jullien 's response to a simple desire: to offer a red wine that combines freshness, accessibility and pure expression of fruit, while embodying a free-spirited vision of the Languedoc, in keeping with the wine estate's identity. This cuvée pays homage to a certain idea of the Terrasses du Larzac, between spontaneity, lightness of spirit and rootedness in their terroir. It brings together a majority of Cinsault , Grenache Noir, Carignan Noir, Syrah and Mourvèdre. The grapes are harvested by hand, with spontaneous fermentation and deliberately gentle extraction. Ageing is short and discreet, between old foudres, demi-muids and stoneware jars, to preserve the wine's natural élan and produce a limpid, straightforward, immediately readable red.
Philippe Mischler, sommelier at Mundovin : Les Nouveaux États d'Âme is a vibrant, immediately seductive Languedoc red. It transcribes the terroir of Larzac with a freshness and intense greediness, taking Mas Jullien's style to a more fluid register, without losing its structure or soul. It's a wonderful invitation to discover the Languedoc in a different way, while offering real ageing potential over several years.
On the nose, the wine opens with an explosion of red and black fruits, where this cuvée finds all its charm. The bouquet is enhanced by spicy notes of black pepper, licorice, garrigue and camphor, a direct reflection of the Larzac terroir.
On the palate, the velvety texture is adorned with silky tannins that underline the elegance of the fruit and refine the substance. Spices and a subtle herbal touch add complexity and length. The long finish and balance between freshness, juiciness and depth promise immediate drinkability and serene evolution.
