The 5 Sens cuvée from the Olivier Horiot wine estate is a champagne inspired by its Burgundian neighbors. The grape varieties used to make this cuvée are Arbane, Pinot Blanc, Chardonnay, Pinot Noir and Pinot Meunier. They come from 5 different terroirs and are all vinified separately in barrels. Olivier Horiot carries out the blending at the end of winemaking, leaving the juices to mingle for some time in the cellar.
Philippe Mischler, sommelier at Mundovin : Les 5 Sens champagne from the Olivier Horiot wine estate is a slow-fermented champagne , matured on fine lees and made from a single vintage that has been kept in vats for over 5 years. This biodynamic champagne is unfined, unfiltered and contains very little sulfur.
On the nose, the champagne opens with notes of ripe fruit, citrus, marzipan and baked apple. This is followed by light notes of red fruit, redcurrant and morello cherry. A touch of aniseed comes through at the end.
The palate is full-bodied, seductive and energetic at the same time. The ripeness of the grapes is just right, giving superb persistence to the aromas. The complexity of the nose is clearly evident on the palate, and Olivier Horiot has done a superb job of enhancing it.
