Roucas Toumba’s Vacqueyras Les Restanques de Cabassole is the most powerful and complex cuvée in the lineup. Éric Bouletin cultivates 3.5 hectares exclusively for this cuvée, with yields carefully controlled at around 24 hectoliters per hectare. The blend consists of 60% old Grenache, 27% Syrah, 10% Mourvèdre, and 3% white grape varieties. Each grape variety benefits from its own specific terroir: pebbles and clay-limestone for the Syrah, limestone-rich sand and marl for the Grenache, and very stony limestone sandstone for the Mourvèdre.
Philippe Mischler, sommelier at Mundovin: The Vacqueyras Restanques from Cabassole de Roucas Toumba is an authentic and rustic wine. Éric Bouletin has no desire to soften his wines; for him, a pure Vacqueyras is a powerful, rustic, spirited, and animal-like wine. His arrival made history for the appellation, and this cuvée is the most striking demonstration of that.
On the nose, notes of ripe black fruit, spices, and licorice form a dark, dense bouquet, which the diversity of the terroirs enriches with rare complexity. The scent of garrigue, leather, and a hint of animal notes immediately identify this as a Vacqueyras, as well as the hand of a winemaker who does not seek to please everyone.
The palate is generous, driven by flavors of ripe black fruit, cocoa notes, and subtle oak, with a rich body and velvety tannins. The finesse of the tannins, derived from the old Grenache vines, is majestic.
