Description: La Perle Rum 70 cl | A1710

There are spirits that defy categorization. La Perle, the cuvée of the A1710 distillery, is the clearest example of this. Founded atthe Habitation du Simon in Le François, Martinique, this distillery’s very name bears the date of its founding: 1710, the year Jean Assier set foot on the island and planted the first sugarcane. Three centuries of history in a 70 cl bottle. This white agricultural rum is pure cane juice, with no additives and no added sugar. Each bottle is wax-sealed, labeled, and numbered by hand.

Terroir and Raw Materials

La Perle is a single-plot, single-varietal rum. It comes exclusively from plot number 6 in Petit Morne, carefully selected within the Habitation du Simon estate. This landscape of sugarcane and mangroves, constantly swept by the Atlantic trade winds, produces raw material with a rare, vegetal freshness. The sugarcane is cut by hand. This slow and precise process preserves the integrity of the juice. The distillery is committed to certified organic farming, staying true to an uncompromising artisanal philosophy.

Fermentation and Distillation

The freshly pressed sugarcane juice ferments for five days using three different types of yeast. This is a long time for a white rum. This extended fermentation period builds aromatic complexity even before distillation. The mash then passes through “la belle Aline,” a copper still designed by Yves Assier de Pompignan after more than a decade of research. A hybrid of a pot still and a seven-plate column still, this unique piece of equipment allows for a delicate and precise extraction. The resulting spirit is then aged in tanks, without any oak ageing. The spirit is completely clear.

La Perle Rum 70cl | A1710: The Sommelier’s Review

Philippe Mischler, sommelier at Mundovin

La Perle is one of the most unexpected agricultural white rums I’ve ever encountered. Its profile defies any conventional categorization of classic Martinique rum. The long fermentation and hybrid still produce an aromatic signature that no other distillery can replicate exactly. This is a rum to be enjoyed neat, at room temperature, to fully appreciate all that the Petit Morne terroir and the expertise of Yves Assier de Pompignan have created. It also pairs well with a carefully prepared Ti-Punch, or serves as an aromatic base for discerning mixologists.

The nose

The nose opens with fresh sugarcane blossoms—clean, almost vegetal. Then come exotic fruits: lychee, guava, and mandarin. A hint of fresh pear and honey rounds out the profile. Subtle herbaceous notes run through this bouquet, reminiscent of freshly pressed sugarcane in the morning. In the background, a light, discreet, iodine-like minerality hints at the proximity of the Atlantic Ocean.

On the palate

On the palate, the attack is smooth, almost velvety. The natural sweetness of the sugarcane juice carries the flavor without any heaviness. Aromas of papaya and ripe banana accompany an enveloping fruitiness, punctuated by a fresh, vegetal edge. The finish is long, salty, and slightly peppery. It lingers with a persistence that is unexpected for a white rum. Full-bodied without being excessive.
