Wine Description
The Chorey-les-Beaune of the Sylvaine Lochet domain is a wine of a superb balance that comes from parcels close to the appellation Savigny-les-Beaune. This plot has a complex terroir composed of a mixture of alluvions, marnes and limestone. The vines are over 50 years old, which makes it possible to obtain a deep, greedy and sapid wine.
Like the cuvées of Ladoix and Saint Aubin In Remilly, the wines need time. It is the signature of the estate, it takes at least 7 years for the wine to be at optimum maturity.
Philippe Mischler, sommelier at Mundovin : A Chorey-les-Beaune nice bill signed Sylvain Lochet stands out for the precision of its fruit, its slightly exotic notes and its vegetal tip. The breeding is done for 9 months in barrels which have contained 3-4 wines. He is the ideal companion of a yellow chicken with mushrooms.
On the nose, the wine reveals beautiful gourmet notes, one feels the maturity of the fruit and the richness just in the first nose. The notes of mirabelle, pear, quince and chamomile are precise and readable.
In the palate, the wine is endowed with a beautiful fat, a certain richness and above all perfectly balanced. Winemaking and breeding are controlled to provide maximum pleasure during tasting. The glass quickly empties so much this wine is invigorating.
