Wine Description

Domaine Sylvie Esmonin 's Gevrey-Chambertin Vieilles Vignes is an emblematic cuvée of the wine estate, reflecting the undeniable expertise and talent of this winemaker. The plots dedicated to this cuvée are located on clay-limestone soils with a predominance of active limestone, giving the wine a remarkable finesse. The old vines, over 70 years old, plunge their roots deep into the soil, drawing nutrients that enrich the wine's aromatic complexity and structure.

Philippe Mischler, sommelier at Mundovin : Sylvie Esmonin practices respectful viticulture, inspired by organic farming, favoring biodiversity and soil health. Harvesting is obviously carried out by hand, with rigorous sorting to ensure that only the healthiest, ripest grapes are kept. Part of the winemaking process is carried out in whole bunches, adding an extra aromatic dimension and a refined tannic structure.

On the nose, the bouquet is expressive and complex, revealing aromas of fresh red fruits such as wild strawberry and raspberry, accompanied by riper notes of blackberry and black cherry. Floral touches of peony and violet intermingle with spicy, subtly smoky nuances, with a hint of tobacco and licorice.

On the palate, this wine is distinguished by its finesse and elegance. The texture is velvety, with silky, perfectly integrated tannins. Red fruit flavors unfold with intensity, followed by more complex notes of undergrowth, tobacco and sweet spices. A light minerality adds freshness and depth to the tasting. The finish is long and persistent, marked by nuances of raspberry and blood orange that leave a sensation of freshness on the palate.
