The plots dedicated to this cuvée are located on clay-limestone soils with a predominance of active limestone, giving the wine a remarkable finesse. The old vines, over 70 years old, plunge their roots deep into the soil, drawing nutrients that enrich the wine's aromatic complexity and structure.

Philippe Mischler, sommelier at Mundovin : Sylvie Esmonin practices respectful viticulture, inspired by organic farming, favoring biodiversity and soil health. Harvesting is obviously carried out by hand, with rigorous sorting to ensure that only the healthiest, ripest grapes are kept.
