Wine Description

Domaine de Vaccelli 's white Chioso Novo already stands out as a jewel among the estate's whites. Located in Cognocoli Monticchi, in Corsica's Ajaccio appellation, the vineyard lies on southeast-facing granite arena slopes, typical of the island's terroir. The varied depths of the granite soils, the sea breeze and the thermal amplitude between day and night shape a Vermentinu with a taut, luminous profile. The grapes are harvested by hand, to ensure that only healthy, ripe grapes are used, using organic viticulture methods. The winemaking process for this grand blanc involves spontaneous fermentation with indigenous yeasts, with a year's ageing in foudres and demi-muids, followed by several months in stainless steel tanks, to preserve freshness and purity while accentuating the aromatic complexity and mineral expression of the terroir.

Philippe Mischler, sommelier at Mundovin : "The Chioso Novo blanc demonstrates, if proof were needed, Domaine de Vaccelli 's ability to produce a great gourmet white. The cuvée expresses the purity of Vermentinu while offering a tasty, digestible fullness, and confirms the wine estate's determination to reveal, through its parcellaires, the singular soul of each terroir. Like all our wine estate whites, this is an expressive wine that will evolve gracefully for a good ten years in the cellar.

On the nose, it's a veritable floral explosion, with acacia and elderflower, lime blossom, wisteria, frangipani, lavender and violet. This impressive bouquet is adorned with musky touches reminiscent of pine nuts. The elegance of the whole is joined by the greediness of crunchy pear and apple, evolved notes of fresh brioche and the chalky minerality of the granite terroir. A formidable complexity, irresistibly inviting for tasting!

The attack on the palate is frank and luminous, carried by lively acidity and elegant minerality that bring tension and verticality. The seductive body unfolds an enveloping aromatic bouquet of bright white fruits, delicate white flowers, wild herbs, fresh almond and fine zesty citrus bitters. The intensity, depth and harmony that emerge glide to a finish of finesse, whose straightforward minerality never ceases to thrill the palate with its freshness.
