Laura Aillaud, a new-generation winemaker showcasing her full talent
Laura Aillaud has followed an unconventional path, having started out as a sommelier in a restaurant where she discovered the world of wine, particularly natural wine. She then decided to deepen her knowledge of the subject and pursued a BTS in Viticulture and Oenology. She carried out her first winemaking projects under Jean Christophe Comor at the Les Terres Promises wine estate and continued her apprenticeship for three years before setting up her own business in La Tour d’Aigues, her hometown.
Laura Aillaud started out leasing 3 hectares before purchasing 3 hectares of vineyards. The grape varieties are very diverse, including Grenache Noir— some of which is about fifty years old—as well as Syrah, Carignan, Counoise, Muscat d’Hambourg, Vermentino, Ugni Blanc, and Roussanne. All the vines have been cultivated organically from the start and according to certain biodynamic principles, notably through the use of very low sulfur levels.
Laura considers this to be the foundation of a winemaker’s craft—the bedrock for crafting great terroir-driven wines. The vineyards are therefore naturally grassed to encourage the vines to draw water from deep in the soil; there is no deep plowing, and the work is as natural and artisanal as possible.
In the cellar, all fermentations occur spontaneously. There are no artificial interventions or additives in the wines: only the pure generosity that emanates from the Luberon terroir, brought to life by this highly talented winemaker who lives in harmony with her vines and her environment.
Production is extremely limited, as are the quantities available. As a result, we have very few wines in stock and an enormous amount of demand. Her entire range is available at Mundovin, including the white cuvées— Long Courrier Blanc and Libre comme l’Air —and the red cuvées— Long Courrier Rouge, Terre à Terre, Tout feu tout femme, Exlibris, and Amorcito.
