Long description
The Cascina Fornace wine estate is located in Santo Stefano Roero, near the north-eastern border of the Cuneo region in Piedmont, and was created in 2009 thanks to the winning intuition of Emanuele and Enrico Cauda. From the outset, Cascina Fornace has been managed according to organic farming standards , and is increasingly moving towards biodynamic management . The vineyard covers around 3.5 hectares, where the region's two most widespread native grape varieties, Nebbiolo and Arneis, predominate .
The vines are worked by hand, no synthetic products or herbicides are used, while in the winemaking phase, only indigenous yeasts are used. Fermentation takes place without temperature control, and the quantity of sulfur used is even 10 times less than that authorized by law. Finally, no filtration is carried out at the bottling stage, so as not to compromise the essence of the raw material's taste and olfactory profile.
The Cascina Fornace wine estate offers a wide range of wines faithful to the traditions of the terroir: expressive, sincere, generous and unpretentious.
For Nebbiolo, Cascina Fornace's "Valdovato", "Viscà" and " Sreja" wines are fruity and full-bodied, with a persistent, gourmet expression. Great gourmet wines.
Emanuele and Enrico have always focused on quality and excellence, with a low-interventionist philosophy that is close to nature and the environment. They focus primarily on expressing the local Roeroterroir . Here, the soils are sandy and rich in limestone, the old vines give very low yields, and the particular climatic conditions allow the grape variety and terroir to be fully and incisively revealed.
