And La Ferme des 9 Chemins is rooted in a terroir of rare finesse, distinguished by varied soils of blue schist and sandstone, and microclimates conducive to vine-growing. These privileged conditions allow us to cultivate a mosaic of grape varieties emblematic of Alsace, from Riesling to Pinot Noir, including Sylvaner and Pinot Auxerrois. Each grape variety finds its own unique expression, capturing the essence of the terroir. Here, the richness of the soil and the unique character of the climate are guided by the skillful hand of the winemaker, and are felt in every cuvée.
For Jeanne Gaston-Breton, viticulture is a harmonious symphony with nature. Between certified organic viticulture and biodynamic practices, she works to preserve the balance of the surrounding ecosystem. The use of natural grass cover, vegetal preparations and the lunar calendar illustrate its strong commitment to environmentally-friendly practices. In the same vein, hand harvesting embodies the attentive philosophy of the wine estate. Each bunch is carefully selected and harvested at its peak of ripeness. This rigorous selection ensures that only exceptional grapes reach the vats.
In the winery, winemaking is carried out without the use of inputs. Delicate pressing of the grapes is followed by spontaneous fermentation with indigenous yeasts, and measured ageing allows progressive impregnation of the aromas, giving the wines a deep personality. La Ferme des 9 Chemins wines are carefully aged in carefully selected oak barrels and old barrels. This key stage in the winemaking process gives the wines a refined texture and admirable aromatic complexity. Time spent on the lees refines flavors and harmonizes profiles.
Jeanne Gaston-Breton produces few wines, both in terms of number of cuvées and number of bottles. Among these precious bottles, the Pinot Noir "Les Terrasses des 7 chemins" stands out for its elegant, fruity and slender profile, like its white twin, based on a Pinot Auxerrois full of fresh greediness. Another white cuvée, a blend of Sylvaner, Riesling and Pinot Auxerrois,"Le Chemin des Loups" is both nervous and charming, while the Riesling "La Montagne de Schiste" reveals remarkable precision and finesse after several years in the cellar.
