Clos des Capucins Pinot Noir comes from an emblematic terroir of the Weinbach wine estate. This terroir benefits from soils composed of sand, alluvium, gravel and granitic pebbles, offering optimal drainage and early ripening of the grapes. Protected from the wind by the surrounding hills, the Clos des Capucins creates a microclimate favorable to the cultivation of Pinot noir, giving this cuvée a unique identity.

Philippe Mischler, sommelier at Mundovin : The Clos du Capucins Pinot noir grapes are hand-picked when fully ripe. Fermentation is carried out with indigenous yeasts, including around 20% whole bunches, and a maceration of around 20 days on skins. Ageing takes place for 14 months in Burgundy oak barrels, allowing the wine to develop its complexity without being dominated by wood.

On the nose, the wine opens with pretty notes of violet, kirsch cherry and hints of star anise. A lovely first olfactory approach that reveals itself with finesse in the purest Weinbach style.

On the palate, the attack is full of energy, the tannins silky and the texture fine. Floral and fruity notes are typical of the Clos des Capucins terroir, with a hint of animality adding personality to the wine.
