Wine Description

The Mia cuvée from Atelier Particulier de Fermentation is a harmonious blend of Jun cultures with rosemary, beets, bergamot, and wild herbs. Jun is a living beverage created through the fermentation of grape leaves and raw honey; this traditional method produces a sparkling, floral, and subtly tart drink with no residual sugar. A firm believer in a local and natural approach, Elsa sources her vine leaves from her neighbors—winemakers certified as organic and biodynamic. After an initial fermentation of the base with local honey, Elsa Steullet carries out a second fermentation in the bottle to achieve the natural effervescence that enhances the aromas of her cuvées. Here, the addition of raw beets, citron, and bergamot provides the natural sugars needed for the yeast to work. The addition of rosemary, gentian, meadowsweet, and woodruff gives this cuvée a character as surprising as its bright pink color, which comes from the beets.

Philippe Mischler, sommelier at Mundovin: With Mia,the Atelier Particulier de Fermentation plays with aromatic palettes the way others might play a musical instrument, and the maceration of aromatic and wild plants gives this cuvée an unexpected botanical energy. Where Erquy is comforting, Mia intrigues. It is the Atelier’s most complex, most vegetal, and most enigmatic cuvée.

On the nose, citrus notes blend harmoniously with the herbaceous and layered character of the plants. Distinct notes of almond from meadowsweet, the liveliness of woodruff, and the almost camphor-like scents of rosemary and sage are evident.

On the palate, it reveals a fine, deliciously tart effervescence that contrasts with the powerful character of rosemary and raw beets, balancing herbaceous liveliness with a lovely vegetal bitterness. The tannic structure of the grape leaves provides a subtle chewiness in the background, which enhances the floral and herbaceous flavors of the whole with a lovely lingering finish.
