Prima from the Atelier Particulier de Fermentation is a harmonious blend of Jun cultures, strawberries, tarragon, and poppies, crafted by Elsa Steullet in her Alsatian workshop. Jun is a living beverage created through the fermentation of grapevine leaves and raw honey; this traditional method produces a sparkling, floral, and subtly tart drink with no residual sugar. A staunch advocate of local and natural methods, Elsa sources her vine leaves from neighboring winemakers certified as organic and biodynamic. Here, it is sweet, floral sweet clover honey that serves as the base for fermentation. The strawberries come from local market gardeners and are grown according toorganic farming principles; the poppies are wild-harvested on land near the workshop, far from any exposure to pesticides; and the tarragon is grown by Elsa in her own garden. These ingredients come together to create a vibrant, sugar-free, naturally sparkling beverage that is as healthy as it is delicious.
Philippe Mischler, sommelier at Mundovin: “Prima de l’Atelier Particulier de Fermentation is spring in a bottle.” With this cuvée, Elsa Steullet blends the generous fruitiness, the herbaceous freshness of tarragon, and the delicate floral notes of the poppy into a drink of disarming lightness, tailor-made for the pleasures of the table.
The nose, immediately fruity and sunny, opens frankly with fresh strawberry, soon joined by poppy, which adds a light, almost powdery floral touch, while tarragon lends a very gentle anise note in the background.
The palate, naturally sparkling and lively, unfolds with a refined acidity that carries the fruit without ever overpowering it. The grape leaf introduces a slight vegetal bitterness that gives structure to the whole, leading to a fresh, clean, and incredibly thirst-quenching finish.
