For a long time, Aligoté was considered a secondary grape variety. Thanks to Domaine de Villaine, it has been given a new lease of life and is once again one of the most important grape varieties in Burgundy winegrowing. An enormous amount of work has been done throughout the region to rehabilitate this grape variety, particularly on the Côte Chalonnaise. In 1997, this work was rewarded with a fully-fledged appellation. Bouzeron is the only appellation made from 100% Aligoté grapes. Domaine de Villaine 's Bouzeron comes from the best slopes in the appellation.

Philippe Mischler, sommelier at Mundovin : I think it's worth pointing out that this Bouzeron from Domaine de Villaine is grown biodynamically, and aged in foudre. This wine has nothing in common with most Aligotés, which are often poorly made or even botched. Also co-owner of Domaine de La Romanée-Conti, Aubert de Villaine wanted to restore this Burgundy grape to its former glory. Far from the image of thirst-quenching wines, a huge amount of selection work has been carried out both in the vineyards and in the cellar to obtain a wine of incomparable quality.

On the nose, a magnificent freshness emanates from this wine, as well as a beautiful minerality. Notes of fresh lemon and grapefruit entwine with pretty spring blossom notes. There's also a hint of wet pebbles. The nose of this wine is very refined and intense, developing a wide range of aromas despite its young age.

The palate is superb, with a gourmet attack. White-fleshed fruit mingles with exotic touches of pineapple and passion fruit. A mastery of grape ripeness and winemaking is evident. The palate is round and crisp, giving the wine as a whole an incredibly delicate body. Domaine de Villaine has produced a fine wine that deserves to be talked about. Grab it while it lasts!
