Wine Description
Domaine de Montille 's Chassagne-Montrachet originates from two parcels in the northern part of the appellation, at Champs Derrières and Les Houillères. The latter is particularly well situated, bordering Puligny and below the Grand Cru Bâtard-Montrachet. On these 0.67 hectares of stony clay-limestone soils, where the influence of the terroir brings more tension than opulence, the Chardonnay expresses a straight, chiselled character, far removed from the traditionally fuller style of Chassagne Montrachet wines. Domaine de Montille 's vineyards are farmed organically and biodynamically, with respect for the soil and a constant quest for purity, both in the cellar and on the estate. After hand harvesting and delicate pressing, the musts are settled and transferred to barrels for fermentation on indigenous yeasts, followed by malolactic fermentation. Ageing lasts around a year, with a measured proportion of new barrels, before a further 4-6 months in vats to preserve the freshness and energy of the terroir.
Philippe Mischler, sommelier at Mundovin : This Chassagne-Montrachet from Domaine de Montille favors straightforwardness over demonstrative richness, and perfectly illustrates the wine estate's refined vision. Far from the more fleshy expressions, this cuvée has a taut, slender line close to the spirit of Puligny. The choice of discreet ageing, combined with the natural potential of its terroir, results in a wine whose brilliance and precision will seduce fans of the Côte de Beaune's crystalline Chardonnay .
The nose reveals a palette of yellow fruits mixed with citrus marmalade, whose aromatic sweetness is tempered by the mineral freshness of the limestone. The wine opens with finesse, without excess, revealing the purity of the bouquet.
On the palate, De Montille 's Chassagne Montrachet unfurls a straightforward, chiselled mineral framework, whose tonic acidity accentuates the brilliance of the material, where aromas of yellow fruit and citrus blossom. The chalky finish leaves the palate with a vibrant sensation of energy.
