Pandaemonium from Domaine Camille and Mathieu Apffel is a cuvée unlike any other, born in the heart of Savoie’s steep slopes, where the Jacquère grape finds its unique expression. Nestled in the clay-limestone valley of Mont Granier, this young wine estate has been carving out its path over the past few vintages with a precision and sincerity that are truly striking. At the Apffels’, there’s no folklore: the work is done in the vineyard, with respect for nature, without artifice. With Pandaemonium, a mineral symphony unfolds—tension-filled yet poetic. This natural wine, made exclusively from Jacquère, is grown biodynamically and vinified without additives, in a spirit of radical and joyful craftsmanship. The cuvée’s evocative and intriguing name sounds like a paradox: behind the suggested storm lies a striking clarity.
Philippe Mischler, sommelier at Mundovin: “ Pandaemonium expresses all the purity of Jacquère. There is a remarkable alpine energy in this wine, a raw sincerity that is perfectly mastered.” Camille and Mathieu Apffel have created a natural wine of great clarity, placing Savoie on the map of great white wine terroirs. It’s taut, precise, and incredibly vibrant.
On the nose, the wine reveals elegant notes of white flowers, candied lemon, and a hint of damp chalk. Nuances of fresh grass and a touch of green almond add a lovely herbal complexity.
On the palate, it opens with a clean attack, enlivened by well-integrated acidity. The texture is crisp and slender, almost crystalline. A delicate mouthfeel, underscored by a salty and subtly chalky finish, prolongs the pleasure for a long time. This is a refined wine, yet never austere. A rare and personal cuvée, where the winemaker’s artistry becomes poetry.
