The red Soleyane from Camille and Mathieu Apffel is yet another demonstration of these winemakers’ talent for blending alpine finesse with natural energy. The young couple has crafted a natural wine of great precision here, made from a balanced blend of Mondeuse and Pinot Noir. Their wine estate, still relatively unknown but already highly prized by connoisseurs, is gradually establishing itself as one of the most exciting new faces in Savoie’s wine scene. Camille and Mathieu Apffel have taken over a few hectares of biodynamic vineyards at the foot of the Bauges Mountains, in an idyllic setting nestled among forests, steep hillsides, and preserved biodiversity. The red Soleyane embodies a sensitive approach to high-altitude reds. Mondeuse, the quintessential Savoie grape variety, contributes structure, peppery freshness, and fine tannins. Pinot Noir balances these elements with its smoothness and vibrant red berry notes. The blend is masterfully crafted, precise, with a refined natural style, and highly drinkable.

Philippe Mischler, sommelier at Mundovin: For me, the Soleyane Red is the perfect illustration of the finest natural red wine Savoie has to offer. I admire the balance between the Mondeuse’s vibrancy and the Pinot Noir’s elegance. It’s a sincere, unpretentious wine that appeals to both the curious and the discerning connoisseur. Every sip tells a little about the mountains and a lot about the winemakers’ hearts.

On the nose, the wine unfolds aromas of morello cherry, wild blackberry, and white pepper. More floral notes, such as peony and violet, round out this expressive bouquet. A light touch of licorice underscores the whole.

On the palate, it is fresh and easy to drink, with fruit that remains juicy from start to finish. The tannins are silky, distinctly present but never harsh. The Mondeuse grape adds a full-bodied, slightly spicy character, very typical of the Savoyard terroir. The finish is clean, almost briny, and leaves you wanting more right away.
