Wine Description

Maison Fleury 's Sonate cuvée was created in 2009, the first vintage to produce a wine winemaking without adding any sulfur throughout the entire process. This feat was repeated in 2011, thanks to the perfect health of the Pinots Noirs and Chardonnays from the Côtes de Champraux and Charme de Fin plots. These two parcels are among the finest on the wine estate.

Philippe Mischler, sommelier at Mundovin : Sonatte 2011 is a champagne wine made from 60% Pinot Noir and 40% Chardonnay from magnificent Côte des Bar parcels. Half of this cuvée is vinified in vats and half in oak. The dosage is extremely low, with only 1 gram per liter added at disgorgement.

On the nose, this champagne offers a remarkable palette of aromas. There are notes of roasted hazelnut, almond and cocoa butter. The champagne evolves with hints of pastry and fine minerality. The palate has a very greedy attack and creamy bubbles. Full-bodied and rich, with the acidity of Chardonnay. Notes of oleaginous fruit and hints of citrus. On the finish, a touch of spice adds depth to this magnificent champagne.
