Wine Description
The cuvée Le Pioch from the Les Vignes Oubliées wine estate embodies the very essence of Terrasses du Larzac, combining the richness of Languedoc with the characteristic freshness of Larzac. Located in Saint-Privat, this cuvée is the fruit of the passionate work of Jean-Baptiste Granier, who has brought new life to old, once neglected vines by cultivating them according to organic and environmentally-friendly practices. Le Pioch vines flourish on a variety of sandstone, shale and clay-limestone soils, offering a unique mineral complexity. Situated at an altitude of up to 350 meters, they benefit from a temperate Mediterranean climate, conducive to slow, balanced ripening of the grapes.
Philippe Mischler, sommelier at Mundovin:The winemaking at Le Pioch is based on the principles of natural winemaking. The Grenache, Mourvèdre and Cinsault grapes are partially destemmed before a 15 to 20-day vatting period in temperature-controlled stainless-steel vats. Fermentation takes place without the addition of yeast, preserving the authentic expression of the terroir. Ageing then takes place for 24 months in demi-muids in a natural cave, offering ideal conditions of temperature and humidity for gentle ripening
The nose is intense and complex, revealing aromas of ripe black fruits such as blackberry and blackcurrant, accompanied by spicy notes of black pepper, licorice and garrigue.
On the palate, the attack is full and velvety, with a fine concentration of fruit and a fine, silky tannic structure. The finish is long, marked by a mineral freshness and slight salinity, the signature of schist and limestone soils
