Cuvée Bubulle from domaine Lise et Bertrand Jousset is a natural sparkling wine emblematic of the Montlouis-sur-Loire appellation in the Loire Valley. Made from 100% Chenin Blanc, this cuvée reflects the wine estate's commitment to organic and biodynamic viticulture, as well as winemaking that respects both grapes and terroir.

Philippe Mischler, sommelier at Mundovin : The Bubulle cuvée is made using the ancestral method, also known as "Pétillant Naturel" or "Pet Nat". Fermentation begins in barrels (with no new wood), then the wine is bottled with around 12 grams of residual sugar, with no added sulfur or dosage. This approach preserves the purity of the fruit and the expression of the terroir.

The nose is particularly expressive, almost charming, with a broad, nuanced aromatic palette. There are notes of fresh reinette apple, juicy pear, candied quince and a floral touch (white flowers, acacia). In the background, more complex aromas of lemon zest, damp chalk and green hazelnut add depth.

The attack is frank and fresh, supported by a fine acidity that sets the tone. The mid-palate is full and salivating, with a surprisingly generous body for a natural sparkling wine. The bubbles are fine, elegant and perfectly integrated into the wine's texture. Mineral tension, typical of Montlouis limestone soils, stretches the palate, reinforced by delicate salinity.
