Champagne Les Saints Rémys Ambonnay Grand Cru by Champagne Marguet is a parcel-based cuvée born in the hills above Ambonnay, a commune classified as a Grand Cru. Since 1975 and 1992, Les Saints Rémys has been planted with Pinot Noir vines rooted in deep soils of red clay, silts and chalk. These soils give the wine a firm structure and a mineral signature unmatched in the Montagne de Reims. The vines are cultivated biodynamically, with horse-drawn ploughing and hand harvesting. Winemaking takes place in oak tuns, without fining or filtration, followed by ageing on the lees, before bottling without dosage as Brut Nature, in keeping with Benoît Marguet's ethical approach.

On the nose, the wine exhales bright red fruits, accompanied by a saline note reminiscent of subsoil chalk. A subtle touch of yeast and fresh brioche underlines the masterful winemaking and skilful ageing. The concentrated expression becomes clearer and fuller with aeration.
On the palate, the attack is straightforward, carried by lively, well-balanced acidity. The Pinot Noir unfurls a broad body, amplified by a simply superb chalky salinity, whose texture is sublimated by the fine, persistent bubbles. The finish prolongs a silky mineral sensation that immediately invites another sip.
