Wine Description
Mas Cal Demoura’s “L’Étincelle” stands out as a unique white wine from the Languedoc, the result of a bold blend that combines Chenin, a grape variety from the Loire Valley, wholeheartedly embraced by Vincent and Isabelle Goumard, with White Grenache, Roussanne, White Carignan, and Petit Manseng. This unexpected blend takes root on the Terrasses du Larzac, in deep soils of limestone scree cooled by the north winds descending from the Grands Causses—a microclimate that tempers the region’s southern exuberance and preserves the grapes’ natural tension.
Philippe Mischler, sommelier at Mundovin: Mas Cal Demoura’s Étincelle represents the wine estate’s most successful venture—that of establishing Chenin on a Languedoc limestone terroir and drawing from it a complexity that few expected so far from the Loire. It is a wine of character, as mineral as it is rich, capable of surprising with its aging potential and the limestone-driven tension that runs through every sip.
The nose is expressive and complex, unfolding delicate floral aromas intertwined with notes of ripe white fruit and citrus. Hints of herbs and a subtle spicy note enrich this bouquet, while a chalky, mineral character gradually emerges—the signature of the limestone of the Terrasses du Larzac.
On the palate, the attack is fresh and precise, driven by a lively acidity that structures the wine’s body with beautiful vibrancy. The flavors of white-fleshed fruits and citrus linger elegantly, supported by a saline backbone and a subtle spicy note that lend length and depth to the finish, resulting in a wine that is as generous as it is taut.
