Wine Description
Chemin du Bois 1er Cru de Champagne R Pouillon & Fils embodies Pinot Noir terroir at its purest: deep, structured, with a striking reading of limestone, yet with an elegance and complexity that will continue to assert itself over time.
Philippe Mischler, sommelier at Mundovin: As one of the oldest massal selections in Champagne, Chemin du Bois is renowned for having inspired Fabrice Pouillon 's winemaking method without exogenous sucrose inputs - now known as the "Méthode Fabrice Pouillon" (or MFP). Vinified in barrels with indigenous yeasts and aged on laths for five years, this 1er Cru shines through with its precise balance of structure and lightness.
The nose unfurls an impressive bouquet of orchard fruits, small red berries and fresh flowers. The brioche-colored structure reveals the traces of prolonged ageing, with autolysis aromas of delicious complexity.
The palate is silky and ample, held together by fresh acidity that stretches the richness of the red fruit, baked apple and fresh butter aromas. The material gains in relief on the finish, which reveals a slightly chalky texture, and above all an intensely salivating salinity.
