Wine Description

Domaine Pignier 's Vin Jaune is made exclusively from Savagnin grapes grown on the remote marl and clay-limestone soils of the Val de Vallière. The vines are planted on hillsides with a southern exposure facing Montaigu. Yields have been reduced to a minimum for this cuvée, reaching 25 hl/hectare. This is to maintain the balance between the plant, the soil and the overall environment.

Winemaking is carried out in oak barrels for 7 years under veil in the Pignier wine estate cellars. After selective sorting, only 1 of the 3 barrels will become Vin Jaune.

Philippe Mischler, sommelier at Mundovin : Domaine Pignier's 2009 Vin Jaune was made in the most natural way possible. No yeast, no chaptalization, no filtration and no additives. A 100% natural product grown according to biodynamic principles and treated with herbs where necessary. A process that takes time and passion. Qualities that the Pignier family has not lost over the years.

On the nose, the wine reveals beautiful notes of dried fruit, walnuts of course, citrus fruits such as combava and hints of spices (turmeric, white pepper). A wine worth taking the time to taste. I always recommend drinking it over 1 to 2 hours, as the phases of evolution are interesting.

The palate is rich, full-bodied and full of character. There are hints of walnut, but also of fresh mushrooms, cinnamon and acacia honey. The longer the tasting, the more interesting it becomes, as the wine changes in the glass, revealing more and more aromas. An authentic wine never to be drunk chilled, but rather at around 15-16°C.
