Philippe Mischler, sommelier at Mundovin : Cyprien Lireux 's Poiré Dégorgé is a celebration of purity. The ancestral method, supplemented by manual disgorging, eliminates the lees and retains only the essence of the fruit. The result is a crystalline juice with an effervescence of great distinction, almost creamy and extremely delicate. It reveals subtle aromas of white flowers and fresh pear, carried by a surprising minerality that stretches the flavors. This is a beverage of rare elegance, where each bubble seems to carry a fraction of the aromatic finesse of old Domfrontais pear trees.
