Domaine Fumey Chatelain's Chardonnay "Sauvagny" is a rare and singular parcel-based cuvée fromArbois, in the heart of the Jura. On the Sauvagny site, old Chardonnay vines take root in a complex soil of grey and blue marl from the Lias and Trias, mixed with marly limestone. Grown organically, this parcel is exposed to both north and south, giving the wine both tension and substance.

Philippe Mischler, sommelier at Mundovin : This cuvée Sauvagny from Fumey Chatelain is a perfect demonstration of the elegance of the great Jura Chardonnays in the Arbois appellation. It stands out for its crystalline freshness and mineral structure. The winemaking is low-intervention: gentle pressing, spontaneous fermentation with indigenous yeasts, and 18 months ageing in foudres, concrete eggs and 500- and 228-liter barrels (no new wood), with the aim of preserving the integrity of the fruit and the imprint of the terroir.

From the very first nose, we find expressive notes of green apple, fresh pear and candied lemon, enhanced by floral touches reminiscent of acacia. There's also a hint of chalkiness. On aeration, the wine opens with more complex nuances of fresh butter, almond and gunflint.

The palate is straight and slender, with a lively attack and a texture that becomes increasingly unctuous without ever becoming heavy. The aromas are faithful to those of the nose, with a taut, saline, easily digestible finish that begs for a second glass. A well-balanced wine, both pure and gourmet, a perfect companion for gastronomy.
