Vin d'Une Nuit rosé 2025 | Mas Jullien

The Vin d'Une Nuit Rosé 2025 is one of Mas Jullien’s most eagerly anticipated cuvées. Olivier Jullien crafts it on the high terraces ofthe Hérault region in Languedoc-Roussillon. The name says it all about a process the winemaker has spent a long time perfecting: a single night of contact between the grape skins and the juice, during which the elements infuse and form a true osmosis. This precise technique results in a saignée rosé of rare intensity and finesse within the appellation.

Terroirs and Grape Varieties

The vines are planted on stony clay-limestone soils on the high alluvial terraces of the Hérault. These well-drained yet deep soils encourage the roots to reach deep into the ground. The result is evident in the wine: concentrated body and a lingering mineral tension. The blend consists of 30% Mourvèdre, 30% Cinsault, 20% Carignan, and 20% ancient local grape varieties.

Viticulture and Winemaking

The vineyard is cultivated using organic farming methods, with practices similar to biodynamics, though no certification is claimed. The grapes are harvested by hand. Winemaking involves saignée, followed by cold static settling. Fermentation takes place with indigenous yeasts in temperature-controlled stainless steel tanks. Ageing continues on fine lees in the tanks until February of the following year. No racking. The wine gains body and texture without losing its integrity.

Vin d’Une Nuit Rosé 2025 | Mas Jullien: The Sommelier’s Review

Philippe Mischler, sommelier at Mundovin

This rosé holds a special place in the Mas Jullien lineup. Olivier Jullien is best known for his complex, serious reds meant for aging. This Vin d’Une Nuit proves that he approaches rosé with the same high standards. The blend of four grape varieties, including old Carignan, is a rare signature for a Languedoc rosé. It is a structured, mineral-driven rosé designed for fine dining, best served with a meal rather than as an aperitif. Its drinking window extends through 2029: it’s worth letting it age for a year or two, allowing the lees to fully contribute their benefits. Best served around 12 °C in a generously sized glass.

The Nose

The nose opens with wild strawberries and peonies, crisp and fresh. A hint of pink grapefruit adds vibrancy to the bouquet. In the background, a subtle floral note of dried rose highlights the character of the Cinsault. The minerality of the limestone gravel makes a discreet appearance, like a signature of the terroir.

Palate

On the palate, the attack is clean, driven by lively, mouth-watering acidity. The body is generous without ever feeling heavy. The texture is silky, almost creamy, the result of ageing on fine lees. The finish lingers with noble bitterness and a persistent minerality. A balance between vibrancy and depth, rarely achieved at this level in a rosé from this appellation.

Languedoc: Everything You Need to Know About This Appellation

The Languedoc appellation covers a vast Mediterranean region, stretching from the Gard to the Aude, through the Hérault. The soils here are remarkably diverse: limestone, schist, sandstone, and clay. The climate, hot and dry, is tempered by northern winds and oceanic influences in higher-altitude areas. The dominant red grape varieties are Grenache, Syrah, Mourvèdre, and Carignan. The appellation produces wines of all colors, with a noticeable rise in quality over the past two decades.

The 2025 Vin d’Une Nuit rosé exemplifies the very best that Languedoc has to offer in terms of rosé and reflects the vision of Olivier Jullien, who continues his quest for authenticity beyond trends and standards.
