Some wine stories begin by chance, while others feel like a calling. Dominique Hauvette’s story falls into the latter category. In 1988, this former lawyer and ski instructor left everything behind to settle in Saint-Rémy-de-Provence, at the foot of the Alpilles. Surrounded by her horses and just two hectares of vineyards—which she bought from her neighbor, a winemaker about to retire—she already had a deep conviction that she had found her calling: to make a living from “working the land,” which she considers the noblest of professions.
Guided by her instincts and inspired by the encounters that would shape her journey—notably with Eloi Dürrbach (Domaine de Trévallon) and Laurent Vaillé (La Grange des Pères)—Dominique forged her own path. Without succumbing to passing trends, she embraced biodynamics long before the term even existed, convinced that the vineyard must remain in harmony with its environment.
Gradually, her vineyard expanded: the initial 2 hectares grew to 15 and then 17, which Dominique cultivates with patience, rigor, and finesse. Nearly 25 years later, her meticulous approach has made her one of the leading names in the world of fine wines from Provence.
Hauvette wine estate stretches across the limestone plateaus , on the northern slope of the Alpilles. Here, the rock outcrops, the garrigue exudes its fragrance, and the mistral winds sweep through the vineyards, cleansing the grapes. This rugged, sun-drenched terroir imparts to the wines their distinctive mineral freshness, a far cry from the excessive heat sometimes associated with wines from the South.
The grape varieties reflect the richness of the Baux-de-Provence appellation and theAlpilles PGI: for reds, Cinsault, Grenache, Syrah, Carignan, and Cabernet Sauvignon; for whites, Clairette, Roussanne, Marsanne, and a small amountof Ugni Blanc. Each grape variety finds a unique expression here, shaped by the clay-limestone soils and a Mediterranean climate with cool nights.
Dominique Hauvette cultivates his vines according to the principles of organic and biodynamic viticulture : shallow tillage, plant-based preparations, adherence to the lunar calendar, and hand harvest. In the cellar, the same philosophy applies: native yeasts, little or no sulfur, and gentle winemaking to preserve the fruit’s integrity. Ageing takes place in concrete tanks, large oak vats, or majestic cement eggs. No ostentatious use of wood, but rather containers chosen to smooth out the rough edges, reveal the purity, and extend the wines’ longevity.
Every decision is aimed at serving what matters most: the authenticity of the terroir, the balance between power and elegance, and that unique character that defines the wines of Domaine Hauvette.
At Domaine Hauvette, the white wines are never merely incidental. TheIGP Alpilles Clairette cuvée showcases this Provençal grape variety in its most luminous simplicity: floral, fresh, and crystalline. Also from the IGP Alpilles appellation, the Dolia cuvée draws inspiration from ageing in amphorae and offers a full-bodied, deep texture, always balanced by a pronounced mineral edge. As for the Jaspe cuvée, it unfolds notes of yellow fruit and honey, with a full-bodied structure and a refined finish. These are great white wines for fine dining, capable of aging gracefully, that defy all the conventions of Provençal white wines.
The Pétra cuvée is a far cry from the typical “pool-rosé” standards of Provence. This IGP Alpilles rosé boasts a rosy, almost garnet hue of surprising depth, along with intense and complex aromas. Its texture and lingering aroma make it an exceptional dining rosé, affirming Dominique Hauvette ’s ability to elevate rosé to the status of a noble and refined wine.
The wine estate’s reds embody the depth of the Alpilles terroir. The Roucas cuvée charms with its immediate richness, featuring notes of red berries and garrigue herbs. More sensual, the blend of Grenache, Syrah, and Cabernet Sauvignon in the Cornaline cuvée is in a league of its own: a powerful, spicy wine built for aging.
