The Fossa di Lupo cuvée from the Occhipinti wine estate is a wine made from frappato vines, all from the same plot planted by Arianna Occhipinti. The vines were pruned in a goblet shape and rest on a bedrock of hard limestone and ferruginous sands on the surface. All the grapes are destemmed and macerated for 20 days. No sulfur or synthetic products are added.

Philippe Mischler, sommelier at Mundovin : Fossa di Lupo is the wine with the greatest ageing potential of the 3 parcel-based cuvées created by Arianna Occhipinti. The nature of its terroir allows it to go well beyond its 10-year potential. Yields are extremely low, around 20 hectoliters per hectare, for a total of 2,700 bottles per year.

On the nose, the wine reveals great purity. It's a veritable score of classical music. There are hints of black fruit, red fruit and smoke, but also of dried flowers and sweet spices. All expressed with great finesse.

The palate is full-bodied, with good aromatic intensity but not opulence. One senses that this wine still has potential and will improve with age. In fact, it needs it. A great, complex, digestible and fleshy wine from Arianna Occhipinti.
