Wine Description

The Fief Boirecuvée from the Saint Nicolas wine estate is a parcel-based cuvée featuring the superb hillsides of the Fiefs Vendéens, a blend of quartz and schist. The vines were planted by Thierry Michon several decades ago. This is the archetypal wine, at once full-bodied, saline, sensual and energetic. The balance between aromatic power and minerality is absolutely sumptuous.

Philippe Mischler, sommelier at Mundovin : Fief Boire is a pure Chenin cuvée that has never had any inputs since its birth. Thierry Michon encourages the vines to take root as much as possible, preserving the microbial life that is so important to their balance. The winemaking process is totally natural, with no sulfur added, and the wine is aged in large Stockinger tuns .

On the nose, the wine is already fully expressed. We are delighted to discover notes of pear, white peach, hazelnut, almond and even a hint of honey, providing a real gourmet pleasure and the desire to go on tasting.

The palate is perfectly balanced between maturity and freshness. The wine reveals notes of candied yellow fruit, hints of rhubarb, bergamot and superb minerality. A dense wine, but without any heaviness. The finish is persistent and saline, a pure delight.
