Wine Description

The Domaine Saint Nicolascuvée Les Chemins is an essential reference in the Fiefs Vendéens, illustrating the Michon family's biodynamic know-how. This white wine, mainly made from Chenin grapes, is produced with a philosophy of minimal intervention to preserve the fruit's brilliance and the appellation's profound identity. Its unique character is based on the Brem-sur-Mer terroir, where the vines flourish on schist and quartz soils in the immediate vicinity of the Atlantic Ocean. This combination of stone and sea spray gives the wine a mineral tension and saline freshness found nowhere else.

On the nose: the wine's remarkable complexity opens with notes of white flowers and ripe citrus fruits, such as yellow lemon and grapefruit. On aeration, more luscious notes of white-fleshed fruit emerge, supported by a deep mineral dimension evoking gunflint and the fresh iodine of the Vendée coastline.

On the palate: a clean attack and a crystalline structure where the fleshy Chenin is perfectly balanced by chiseled acidity. The mid-palate is marked by great purity, evolving towards a persistent, intensely saline finish that underlines the nobility of this schist terroir. This gastronomic wine stands out for its straightforwardness and its ability to accompany noble fish or shellfish with elegance.
