Romain Le Bars ' Tavel embodies the very essence of this southern Rhone Valley terroir, where rosé is not just a summer wine, but a true signature. Romain Le Bars, formerly of Domaine de l'Anglore, continues his work here with a cuvée that combines precision, freshness and character. Made from a meticulous blend of Grenache, Cinsault and Syrah, this Tavel displays all the sunny identity of its appellation without ever losing finesse. The Mediterranean climate leaves its mark, with sunny days and cooler nights that preserve the freshness of the fruit. The grapes come from a selection of old vines rooted in soils combining rolled pebbles, sand and clay typical of the Tavel appellation, at the gateway to the Rhône Gardois. Gently vinified in whole bunches with their own indigenous yeasts, they allow the juice to fully express the sincerity of this emblematic Southern Rhône terroir.
Philippe Mischler, sommelier at Mundovin : Romain Le Bars' Tavel is a wine that stays with you for a long time. This cuvée has remarkable energy, a vibrant reading of the terroir and, above all, a mouthfeel that bears witness to winemaking without artifice. Its aromatic palette and structure make it a gastronomic wine, far more than a simple summer rosé. A rare wine, produced in very small quantities, that deserves the full attention of lovers of rosés with character. Romain Le Bars' Tavel is one of the appellation's great references.
On the nose, the wine opens with precise aromas of wild raspberry, fresh peony and blood orange zest. More complex notes of white pepper and infusion enrich this elegant bouquet.
The palate is full-bodied, carried by a juicy structure and dazzling freshness. Ripe red fruit mingles with lovely tension, and a subtle bitterness of citrus zest stretches the finish. A saline touch adds verticality and a welcome breath of minerality. The presence of Cinsault adds suppleness, while the discreet but essential Syrah adds relief. As for Grenache, its sunny greediness and generous roundness are the wine's hallmarks.
