Wine Description

Sylvain Pataille 's Bourgogne Aligoté embodies the pure expression of a long-underestimated grape variety, now brilliantly rehabilitated by this emblematic figure from Marsannay. Made mainly from oldAligoté vines planted in 1949 on the excellent Les Roseys parcel, this white wine bears witness to the winemaker's philosophy: let terroir speak for itself. Soils of red clay mixed with limestone give this cuvée a rare fullness, coupled with superb mineral tension. Organic viticulture, carried out with exemplary rigor, is accompanied by biodynamic practices and meticulous hand harvesting. Fermentation is carried out by indigenous yeasts in vats, after gentle whole-cluster pressing. Ageing lasts around twelve months in oak barrels, to refine the wine without ever masking its natural purity. Without a doubt one of the most authentic cuvées from the Sylvain Pataille wine estate, seductive in its precision and sincerity.

Under the leadership of renowned winemakers such as Aubert de Villaine, Domaine P&M Jacqueson and, of course, Domaine Sylvain Pataille in Marsannay, the future ofAligoté looks bright in Burgundy. This fresh, cheerful cuvée will charm you with its aromatic precision and remarkable minerality. It also displays the quiet strength of wines that gain in complexity after a few years of cellaring.

On the nose, notes of roasted almonds blend perfectly with hints of citrus and white flowers. The delicately buttery, mineral notes are Sylvain Pataille's trademark, a brilliant combination of delicacy and finesse. The overall impression is one of great purity, enhanced by a delicate hint of iodine.

From the outset, the ample palate reveals a sublime balance between caressing substance and chiseled vivacity. Flavors of crisp white fruit, fresh almond and a hint of butter from the well-controlled ageing. The finish is reminiscent of gunflint, leaving a fresh, lingering impression of mineral salivation. A masterful balance between fleshiness and verticality, a true manifesto of Sylvain Pataille's style and the potential of Bourgogne Aligoté in Marsannay!
