Made mainly from oldAligoté vines planted in 1949 on the excellent Les Roseys parcel, this white wine bears witness to the winemaker's philosophy: let terroir speak for itself. Soils of red clay mixed with limestone give this cuvée a rare fullness, coupled with superb mineral tension. Organic viticulture, carried out with exemplary rigor, is accompanied by biodynamic practices and meticulous hand harvesting. Fermentation is carried out by indigenous yeasts in vats, after gentle whole-cluster pressing. Ageing lasts around twelve months in oak barrels, to refine the wine without ever masking its natural purity.
